Here's another favourite recipe for bulan puasa, easy to prepare and very nutritious. Potato pie is a one dish meal and an option for a no rice buka puasa meal. It can save us from being sleepy during terawih.
To make Potato Pie, you need:
4 - 5 large potatoes
2 piece chicken breast or half a chicken
1 big onion
1 carrot
1 piece celery stick
1 - 2 tomatoes
4-5 mushrooms ( fresh or canned )
1 cup mix vege ( frozen )
1 tablespoon curry powder or perencah soup or tomato puree ( your own choice )
Salt, pepper, stock ( chicken or beef home made stock or cubes from the supermarket )
1 to 2 tablespoons flour ( to thicken the gravy )
1. peel potatoes, cut into small pieces and boil, when it turn soft sprinkle some salt and paper and stir until smooth, make it a bit soft ( add milk if you like )
2. Cut chicken into bite size,
3. Cut celery, onion, carrot as you like and mix with the frozen vege
4. In a wok or pot - fry some garlic and a few spices with 1 or 2 tablespoons oil until fragrant, then add flour, fry again until it turn yellow
5. Add in the chicken, stir for awhile and pour 2 glasses of water and 1 chicken or beef cube ( or 2 glasses of homemade stock ), leave it to simmer
6. Add in the large chunk vege, when it is a bit soft add the frozen mix vege until it thickened then it is ready for baking
7. Pour the gravy in a baking dish, top up with mash potato and bake ( top grill only ) for about half an hour or so
8. Potato pie ready to be serve
9. Ta..daaaa..........enjoy your breaking fast without rice....
